Pogona Baking Company brings conscious, flavorful baked goods to the Orlando area.
Formed in 2015, Pogona Baking Company is a totally vegan bakery focused on using local, seasonal flavors to make a variety of baked goods completely from scratch.
We specialize in custom orders, ranging from birthday cakes to holiday pies to custom cookie gifts to wedding cakes to everyday treats. We also do pop-ups and attend events in the Orlando and Winter Park area.
Pogona Baking Company would love to make a custom dessert for a birthday, party, holiday, wedding, or just because.
For regular custom orders, we require 48 hours notice, though we recommend you let us know earlier - especially for weekends and holidays - to make sure we don't fill up. For larger orders such as weddings or other big events, please give us at least 30 days' notice so that we can properly plan and prepare for your day. Payment for regular custom orders is required no later than 24 hours before the order and payment for weddings and large events is due 7 days before the event. Keep in mind that order deadlines might be different for our special holiday menus.
Currently, we offer both pickup and delivery for custom orders in the Winter Park and Orlando area. Delivery charges are based on your location, however they tend to range from free to $5. Pickup is in Winter Park from 2-6pm.

All flavors listed are our year-round flavors. We have a rotating menu of seasonal flavors available as well. We post this list on social media and send it to our email list. You can also ask us for a list of current seasonal flavors.
Seasonal Menus and Ordering
Due to a busy holiday season this year, our ordering process has changed slightly for October through december. Please let us know if you have any questions.
Orders for October 27th - 31st must be placed by October 22nd.
ALL orders for the month of November (Thanksgiving or otherwise) MUST be placed by October 29. We tend to fill up for holidays so consider placing any orders for the week of Thanksgiving even earlier, if possible. We will not be taking orders for the day of Thanksgiving (November 23), therefore all Thanksgiving orders must be placed for November 22.
We are unable to accommodate any delivery orders until January 1 (if you already have an order on the books with delivery, your order will not be changed, don't worry). Pickup will continue as normal.

Orders for weddings and other large events must be finalized 30 days prior to the event, however we recommend getting in touch much sooner, so that we can reserve your date and schedule a tasting and consultation.
Pricing for a wedding cake is based on the per tier cost of each cake (see above for our layer cake prices), plus decor and delivery fees. We will break this all down for you at the consultation so you can see where each of the numbers are coming from.

What is vegan food?
Vegan food is food made with no animal ingredients or byproducts. That includes no dairy, honey, eggs, gelatin or meat. This is sometimes also called plant-based food.
What is veganism?
Veganism is a way of living which seeks to exclude, as far as is possible and practicable, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose.
Are your products gluten free/Do you make gluten free products?
Most of our products do contain gluten and none of our products are suitable for individuals with gluten allergies, as they are made in a kitchen with lots of wheat ingredients and cross-contamination is a risk.
Do you make products that are soy free/dairy free/nut free/corn free/etc.?
All of our products are free of eggs and dairy and are prepared in a kitchen completely free of both of those ingredients, making all of our food safe for dairy and egg allergies.
Some of our products are also soy free (like our decorated sugar cookies), nut free (virtually all of our cakes and icings), and corn free as well. If you have a food allergy or dietary restriction, let us know and we can work with you to pick something off of our menu or create a custom order that fits your diet.
Why do you advertise that your products are made from scratch? Don't all bakeries make their products from scratch?
Surprisingly, not all bakeries and restaurants make their products from scratch. While some do, many purchase components of their products already made (such as icing and fondant). At Pogona, we make virtually all of our products from scratch, even down to our sprinkles. Instead of using ingredients like lemon extract, we use fresh, whole lemons, This not only makes a massive difference in the quality and flavor of our products, but it also gives us more control over the sourcing of our ingredients.
Is your sugar vegan? What kind of sugar/sweeteners do you use?
Yes! Some sugar in the United States is processed with animal bone char. We carefully source our sugar and everything we use is either minimally processed evaporated cane juice or sugar processed with plant charcoal. We also use raw turbinado sugar, coconut sugar, agave, maple syrup and house made pineapple and apple (vegan) honeys as sweeteners in some of our desserts.
We are also careful to pay attention to where our sugar is grown. While local is almost always better, when it comes to Florida sugar, the opposite is true. Sugar grown in Florida is a large cause of many environmental disasters in the state, including the recent fish kills in the Indian River Lagoon, the drying up and destruction of the Everglades (and therefore the near extinction of many animals that live there, including Florida panthers) and water shortages in the southernmost part of the state. Therefore, while we make an effort to source as many of our ingredients as possible locally, our sugar is grown in other parts of the Americas.
Do you use palm oil or coconut oil? I've heard they are unsustainable and not vegan.
Recently palm oil and coconut oil have been getting a lot of attention for their unsustainable growing practices, particularly in Indonesia. Palm oil plantations are a leading cause of habitat destruction for orangutans and other unique and very endangered animals. Coconut oil can also be comparably destructive, and some coconut oil plantations in the region use trained, abused monkeys to harvest the coconuts.
Therefore, while some of our products do contain palm and coconut oils (they play an important role in our buttercreams and cookies), none of the palm or coconut oil we source comes from Indonesia or other regions with a record of these horrible practices. All of our coconut and palm oil was grown in the Americas, where practices are more sustainable.
Do you have a storefront?
Not yet! Right now we sell our products wholesale and through partnerships with local businesses. Stay tuned, though, as a storefront is in our long term plans.

Pogona? What does that mean?
"Pogona" is the scientific name for bearded dragons. We live with a rescued bearded dragon named Bruce, and the name of the company is a reference to him. The logo is actually his outline, down to his two missing toes that he lost as a baby before we adopted him.
